How to Make Spicy Chicken Masala</h3>

<li>Heat mustard oil in a pan.</li>
<li>Add curry leaves and fry on a low flame.</li>
<li>Take out the fried curry leaves and put kalonjee, saunf and garlic in the same oil. Roast them together until yellowish-brown.</li>
<li>Now add chopped onion and mix them until golden brown.</li>
<li>Add tomato puree, ginger and green chillies to the pan and mix well.</li>
<li>Cover the pan and let it cook for a while.</li>
<li>Now open the pan and add the boneless chicken pieces to the cooked masala.</li>
<li>Mix the chicken thoroughly to coat it well with the masala.</li>
<li>Add some salt and tomato puree. Stir well.</li>
<li>Bring to simmer, and add red chilli powder, cumin powder, black salt and crushed peppercorn. Mix well.</li>

<li>1 onion</li>
<li>1-2 green chilies, chopped</li>
<li>1 tbsp. ginger-garlic paste</li>
<li>1/2 tsp. turmeric powder</li>
<li>to taste salt</li>
<li>1 tbsp. kashmiri red chili powder</li>
<li>1 tsp. garam masala powder</li>
<li>2 tbsp. tomato paste</li>
<li>1/4 cup fried onions</li>
<li>handful coriander & mint leaves, chopped</li>
<li>12-15 roasted cashews & almonds</li>
<li>pinch saffron immersed in 1/4 cup milk</li>
<li>1 tsp. rose water</li>
<li>1 small piece of charcoal</li>

DIRECTIONS</h3>
<ol>
<li>Rinse, wash and drain the soaked rice. Cook rice until water is absorbed, and rice are done. Set aside to cool down.</li>
<li>Heat oil in a pan and temper with whole spices (cinnamon, cardamoms, cloves, bay leaf, star anise and mace). Add the onion and green chilies. Saute till light brown.</li>
<li>Add the ginger-garlic paste, tomato paste, turmeric, red chilli powder, garam masala powder and salt mixed with a little water. Fry till oil separates.</li>
<li>Prepare K&N’s Mughlai Tikka as per the instructions on the pack</li>
<li>Add the prepared K&N's Mughlai Tikka in the gravy and cook for 2 more minutes.</li>
<li>Now take a large pan, layer the chicken tikka gravy, boiled rice, fresh coriander, fresh mint and repeat it. Now add saffron soaked in milk, rose water, yellow food color, garnish</li>

<li>1 teaspoon Red Chili Powder</li>

<li>½ teaspoon Coriander Powder – (roasted and grounded)</li>
<li>1 Tsp Cumin – (roasted and grounded)</li>
<li>½ teaspoon Black Pepper Powder</li>
<li>2 Tbsp Coconut Milk</li>
<li>Cream – ½ cupl</li>
<li>Almonds – 8-10</li>
<li>Cashew Nuts –8-10</li>
<li>Coconut milk 2-3 Tbsp</li>
<li>Oil – ¼ cup</li>
<li>Whole Spices – 1 Bay Leaf, 1 Cinnamon Stick (2-3 inches), ½ teaspoon Whole Mace, 2 Whole Cloves, ½ tsp Black Cumin, 1 Cardamom Pod</li>

Direction for Chicken Mughlai Tikka :</h3>
<ol>
<li>Prepare K&N’s Mughlai Tikka as per the instructions on the pack and set aside.</li>
<li>Blend boiled onions into a smooth paste.</li>
<li>In a pot, add a quarter cup of oil and add all the whole spices. Once they begin to sizzle, add the onion paste.</li>
<li>Let the onions cook until they turn light brown. Now add the ginger garlic paste and chopped green chili. When the ginger garlic turns brown, add the tomato puree, salt, red chili</li>
<li>powder, black pepper, turmeric, cumin and coriander powder, and let it cook on a medium flame by adding half a cup of water.</li>
<li>Grind the nuts with 2-3 Tbsp of coconut Milk.</li>
<li>When the curry is partially cooked add nut paste and cream. Cook until the curry is smooth and thick. Now add prepared K&N’s Mughlai Tikka</li>
<li>Now mix and let it simmer for another 2 to 3 minutes on a low flame.</li>
